The first step of a short supply chain.

Unica is the meat of young Fassone cattle of around 12 months, born on Piedmontese farms and fed on natural products using traditional methods. Control of the chain starts here, personally overseen by Marco Martini.

Farm, abattoir and processing plant belong to the same company: that is what lets us follow every step without intermediaries.

The cattle are born on Piedmontese farms, in the area where we have worked for three generations.

The area

Beyond the Unica line, the area around Boves brings two further livestock traditions into the company.

His Majesty the Ox

The Bue Grasso is raised mainly in the Cuneo area, particularly around Carrù. It is an adult ox of about 5 years that leads a quiet life outdoors until the age of 3; from then on its feed changes, with more vegetable protein and carbohydrate, producing tender and flavourful meat.

Lamb and kid from the Bisalta

Raised for centuries between the valley-floor villages and the higher hamlets of the Bisalta. The kid, fed on natural milk, reaches 12–14 kg with lean, delicate meat. Lamb is raised in two types: the 18 kg lamb available all year round, and the autumn “Tardoun”, with redder and tastier meat.
